- Tomatoes - 500 grams, chopped
- Onion - 1 medium, diced
- Garlic - 3 cloves, minced
- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Vegetable broth - 500 ml
- Olive oil - 1 tablespoon
- Fresh basil - 10 grams, chopped
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Red pepper flakes - 1/4 teaspoon (optional)
- Lemon juice - 1 tablespoon
Steps
- In a large pot, heat the olive oil over medium heat. Add the diced onion, carrot, and celery; sauté for about 5 minutes until the vegetables are softened.
- Add the minced garlic and cook for an additional 1 minute until fragrant.
- Stir in the chopped tomatoes, salt, black pepper, and red pepper flakes (if using). Cook for about 5 minutes, stirring occasionally, until the tomatoes start to break down.
- Pour in the vegetable broth, bring to a boil, then reduce heat and simmer for 15 minutes.
- Remove from heat and stir in the fresh basil and lemon juice for added flavor.
- Using an immersion blender, blend the soup until smooth. Alternatively, carefully transfer the soup to a blender in batches and blend until smooth, then return to the pot.
- Taste and adjust seasoning if necessary. Serve hot, garnished with additional basil leaves if desired.
