Ingredients

  • Tomatoes - 500 grams, chopped
  • Onion - 1 medium, diced
  • Garlic - 3 cloves, minced
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Vegetable broth - 500 ml
  • Olive oil - 1 tablespoon
  • Fresh basil - 10 grams, chopped
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Red pepper flakes - 1/4 teaspoon (optional)
  • Lemon juice - 1 tablespoon

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion, carrot, and celery; sauté for about 5 minutes until the vegetables are softened.
  2. Add the minced garlic and cook for an additional 1 minute until fragrant.
  3. Stir in the chopped tomatoes, salt, black pepper, and red pepper flakes (if using). Cook for about 5 minutes, stirring occasionally, until the tomatoes start to break down.
  4. Pour in the vegetable broth, bring to a boil, then reduce heat and simmer for 15 minutes.
  5. Remove from heat and stir in the fresh basil and lemon juice for added flavor.
  6. Using an immersion blender, blend the soup until smooth. Alternatively, carefully transfer the soup to a blender in batches and blend until smooth, then return to the pot.
  7. Taste and adjust seasoning if necessary. Serve hot, garnished with additional basil leaves if desired.
