- Oxtail - 500 grams
- Olive oil - 2 tablespoons
- Onion - 1 medium, diced
- Garlic - 3 cloves, minced
- Carrot - 1 large, diced
- Celery - 1 stalk, diced
- Tomato - 1 medium, diced
- Bay leaves - 2
- Thyme - 1 teaspoon, dried
- Beef broth - 1 liter
- Water - 500 milliliters
- Salt - to taste
- Black pepper - to taste
- Parsley - 2 tablespoons, chopped (for garnish)
Steps
- In a large pot, heat the olive oil over medium heat. Add the oxtail pieces and brown them on all sides, about 10-15 minutes.
- Remove the oxtail from the pot and set aside. In the same pot, add the diced onion, garlic, carrot, and celery. Sauté until the vegetables are softened, about 5-7 minutes.
- Add the diced tomato and cook for another 3 minutes. Stir in the bay leaves and thyme.
- Return the oxtail to the pot. Pour in the beef broth and water, and bring to a boil. Reduce heat to low and let it simmer, covered, for about 2 hours or until the meat is tender.
- Once the oxtail is tender, remove it from the pot, discard the bones, and shred the meat. Return the meat to the soup, and season with salt and black pepper to taste.
- Serve hot, garnished with chopped parsley.
