Ingredients

  • Quinoa - 100 grams
  • Vegetable broth - 500 milliliters
  • Carrot - 1 medium, diced
  • Zucchini - 1 small, diced
  • Onion - 1 small, chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 1 tablespoon
  • Tomato - 1 medium, diced
  • Bell pepper (any color) - 1 small, diced
  • Cilantro - 2 tablespoons, chopped
  • Lime - 1, juiced
  • Salt - to taste
  • Black pepper - to taste
  • Cumin - 1 teaspoon

Steps

  1. Rinse the quinoa under cold water until the water runs clear, then set aside.
  2. In a medium pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent.
  3. Add the diced carrot, zucchini, bell pepper, and tomato to the pot. Stir and cook for about 5 minutes until the vegetables begin to soften.
  4. Pour in the vegetable broth and bring to a boil. Add the rinsed quinoa, cumin, salt, and black pepper. Reduce the heat and let it simmer for 15 minutes, or until the quinoa is cooked and the vegetables are tender.
  5. Stir in the chopped cilantro and lime juice just before serving. Taste and adjust seasoning as needed.
  6. Serve hot, garnished with additional cilantro if desired.
