Ingredients
- Quinoa - 100 grams
- Vegetable broth - 500 milliliters
- Carrot - 1 medium, diced
- Zucchini - 1 small, diced
- Onion - 1 small, chopped
- Garlic - 2 cloves, minced
- Olive oil - 1 tablespoon
- Tomato - 1 medium, diced
- Bell pepper (any color) - 1 small, diced
- Cilantro - 2 tablespoons, chopped
- Lime - 1, juiced
- Salt - to taste
- Black pepper - to taste
- Cumin - 1 teaspoon
Steps
- Rinse the quinoa under cold water until the water runs clear, then set aside.
- In a medium pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until the onion is translucent.
- Add the diced carrot, zucchini, bell pepper, and tomato to the pot. Stir and cook for about 5 minutes until the vegetables begin to soften.
- Pour in the vegetable broth and bring to a boil. Add the rinsed quinoa, cumin, salt, and black pepper. Reduce the heat and let it simmer for 15 minutes, or until the quinoa is cooked and the vegetables are tender.
- Stir in the chopped cilantro and lime juice just before serving. Taste and adjust seasoning as needed.
- Serve hot, garnished with additional cilantro if desired.
