  • Vegetable broth - 500 ml
  • Olive oil - 1 tablespoon
  • Cilantro - 2 tablespoons, chopped
  • Lime juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until translucent, about 5 minutes.
  2. Add the diced tomatoes to the pot, cooking for another 3-4 minutes until they soften.
  3. Stir in the sliced okra and sauté for an additional 5 minutes, allowing it to release its juices.
  4. Pour in the vegetable broth, and season with salt and black pepper. Bring the mixture to a simmer.
  5. Reduce the heat to low and let the soup cook for about 15 minutes, stirring occasionally, until the okra is tender.
  6. Remove from heat and stir in the chopped cilantro and lime juice.
  7. Serve hot, garnished with additional cilantro if desired.
