- Vegetable broth - 500 ml

- Cilantro - 2 tablespoons, chopped
- Lime juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until translucent, about 5 minutes.
- Add the diced tomatoes to the pot, cooking for another 3-4 minutes until they soften.
- Stir in the sliced okra and sauté for an additional 5 minutes, allowing it to release its juices.
- Pour in the vegetable broth, and season with salt and black pepper. Bring the mixture to a simmer.
- Reduce the heat to low and let the soup cook for about 15 minutes, stirring occasionally, until the okra is tender.
- Remove from heat and stir in the chopped cilantro and lime juice.
