- Carrot - 1 medium, diced
- Celery - 1 stalk, diced
- Potato - 1 medium, diced
- Vegetable broth - 750 milliliters
- Bay leaf - 1
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - 2 tablespoons, chopped
Steps
- In a pot, heat the olive oil over medium heat. Add the diced onion and garlic, sautéing until the onion is translucent.
- Add the diced carrot and celery, cooking for another 5 minutes until they begin to soften.
- Stir in the diced potato and pinhão, mixing well.
- Pour in the vegetable broth and add the bay leaf. Bring the mixture to a boil, then reduce heat and let it simmer for 20 minutes.
