  • Lime juice - 2 tablespoons
  • Coconut milk - 200 ml
  • Vegetable broth - 500 ml
  • Chili powder - 1 teaspoon

Steps

  1. In a large pot, heat the palm oil over medium heat.
  2. Add the chopped onion and minced garlic, sautéing until the onion is translucent.
  3. Stir in the chopped tomato and bell pepper, cooking for another 5 minutes.
  4. Pour in the vegetable broth and bring to a simmer.
  5. Add the coconut milk, chili powder, salt, and black pepper, stirring to combine.
