- Celery - 1 stalk, diced
- Vegetable broth - 500 ml
- Coconut milk - 100 ml
- Fresh cilantro - 2 tablespoons, chopped

Steps
- In a large pot, heat the olive oil over medium heat. Add the diced onion and garlic, sauté until translucent, about 3-4 minutes.
- Add the diced tomato, bell pepper, carrot, and celery to the pot. Cook for another 5 minutes, stirring occasionally.
- Pour in the vegetable broth and bring the mixture to a simmer. Cook for 10 minutes until the vegetables are tender.
- Add the white fish fillets to the pot, along with the coconut milk, cilantro, lime juice, salt, and black pepper. Cook for an additional 5-7 minutes, or until the fish is cooked through and flakes easily.
- If desired, sprinkle chili flakes for added heat. Adjust seasoning to taste and serve hot.
