  • Bell pepper (red or yellow) - 1 medium, diced
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Vegetable broth - 500 ml
  • Coconut milk - 100 ml
  • Fresh cilantro - 2 tablespoons, chopped
  • Lime juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Chili flakes (optional) - 1/4 teaspoon

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and garlic, sauté until translucent, about 3-4 minutes.
  2. Add the diced tomato, bell pepper, carrot, and celery to the pot. Cook for another 5 minutes, stirring occasionally.
  3. Pour in the vegetable broth and bring the mixture to a simmer. Cook for 10 minutes until the vegetables are tender.
  4. Add the white fish fillets to the pot, along with the coconut milk, cilantro, lime juice, salt, and black pepper. Cook for an additional 5-7 minutes, or until the fish is cooked through and flakes easily.
  5. If desired, sprinkle chili flakes for added heat. Adjust seasoning to taste and serve hot.
