- Vegetable broth - 500 ml

- Garlic - 2 cloves, minced
- Olive oil - 1 tablespoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Cilantro - 2 tablespoons, chopped
- Lime - 1, juiced
Steps
- Heat the olive oil in a medium saucepan over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent, about 3-4 minutes.
- Add the fresh corn kernels to the saucepan and cook for another 5 minutes, stirring occasionally.
- Pour in the vegetable broth and bring the mixture to a boil. Reduce heat and let it simmer for 10 minutes.
- In a blender, carefully blend the soup until smooth, then return it to the saucepan.
- Stir in the coconut milk, salt, and black pepper. Heat through for another 5 minutes, then remove from heat.
- Add lime juice and stir to combine. Serve hot, garnished with chopped cilantro.
