Ingredients

  • Fresh corn kernels - 300 grams
  • Coconut milk - 200 ml
  • Vegetable broth - 500 ml
  • Onion - 1 small, chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Cilantro - 2 tablespoons, chopped
  • Lime - 1, juiced

Steps

  1. Heat the olive oil in a medium saucepan over medium heat. Add the chopped onion and minced garlic, and sauté until the onion is translucent, about 3-4 minutes.
  2. Add the fresh corn kernels to the saucepan and cook for another 5 minutes, stirring occasionally.
  3. Pour in the vegetable broth and bring the mixture to a boil. Reduce heat and let it simmer for 10 minutes.
  4. In a blender, carefully blend the soup until smooth, then return it to the saucepan.
  5. Stir in the coconut milk, salt, and black pepper. Heat through for another 5 minutes, then remove from heat.
  6. Add lime juice and stir to combine. Serve hot, garnished with chopped cilantro.
