Steps
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, sauté until translucent.
- Add the chopped bell pepper and diced tomatoes, cooking for an additional 5 minutes until softened.
- Pour in the fish stock and coconut milk, bring to a simmer, and season with lime juice, salt, black pepper, and red pepper flakes.
- Add the cubed fish, shrimp, mussels, and scallops. Cook for about 10-12 minutes, until the seafood is cooked through and the mussels have opened.
