- Mandioquinha (sweet potato) - 300 grams
- Carrot - 1 medium (about 100 grams)
- Onion - 1 small (about 70 grams)
- Garlic - 2 cloves
- Vegetable broth - 500 milliliters
- Olive oil - 1 tablespoon
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- Peel and chop the mandioquinha and carrot into small cubes.
- Finely chop the onion and garlic.
- In a pot, heat the olive oil over medium heat and add the onion and garlic. Sauté until the onion is translucent, about 3-4 minutes.
- Add the chopped mandioquinha and carrot to the pot, stirring to combine with the onion and garlic.
- Pour in the vegetable broth and bring to a boil. Reduce the heat and let it simmer for about 15-20 minutes, or until the mandioquinha and carrot are tender.
- Using an immersion blender, blend the soup until smooth. If you don’t have an immersion blender, carefully transfer the soup to a regular blender in batches and blend until smooth.
- Return the soup to the pot, season with salt and black pepper to taste, and stir in the chopped parsley.
- Serve hot, garnished with additional parsley if desired.
