Ingredients

  • Mandioquinha (sweet potato) - 300 grams
  • Carrot - 1 medium (about 100 grams)
  • Onion - 1 small (about 70 grams)
  • Garlic - 2 cloves
  • Vegetable broth - 500 milliliters
  • Olive oil - 1 tablespoon
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Peel and chop the mandioquinha and carrot into small cubes.
  2. Finely chop the onion and garlic.
  3. In a pot, heat the olive oil over medium heat and add the onion and garlic. Sauté until the onion is translucent, about 3-4 minutes.
  4. Add the chopped mandioquinha and carrot to the pot, stirring to combine with the onion and garlic.
  5. Pour in the vegetable broth and bring to a boil. Reduce the heat and let it simmer for about 15-20 minutes, or until the mandioquinha and carrot are tender.
  6. Using an immersion blender, blend the soup until smooth. If you don’t have an immersion blender, carefully transfer the soup to a regular blender in batches and blend until smooth.
  7. Return the soup to the pot, season with salt and black pepper to taste, and stir in the chopped parsley.
  8. Serve hot, garnished with additional parsley if desired.
