- Jiló - 200 grams
- Potato - 150 grams
- Carrot - 100 grams
- Onion - 1 medium (approximately 150 grams)
- Garlic - 2 cloves
- Vegetable broth - 500 ml
- Olive oil - 2 tablespoons
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Wash the jiló, cut it in half, and remove the seeds if necessary. Chop the potato and carrot into small cubes.
- In a medium pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until translucent.
- Add the jiló, potato, and carrot to the pot, stirring well for about 5 minutes.
- Pour in the vegetable broth, bring to a boil, then reduce the heat and let simmer for about 15 minutes, or until the vegetables are tender.
- Season with salt and black pepper to taste. Blend the soup with an immersion blender until smooth, or leave it chunky for more texture.
- Serve hot, garnished with fresh parsley.
