Ingredients

  • Jiló - 200 grams
  • Potato - 150 grams
  • Carrot - 100 grams
  • Onion - 1 medium (approximately 150 grams)
  • Garlic - 2 cloves
  • Vegetable broth - 500 ml
  • Olive oil - 2 tablespoons
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Wash the jiló, cut it in half, and remove the seeds if necessary. Chop the potato and carrot into small cubes.
  2. In a medium pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until translucent.
  3. Add the jiló, potato, and carrot to the pot, stirring well for about 5 minutes.
  4. Pour in the vegetable broth, bring to a boil, then reduce the heat and let simmer for about 15 minutes, or until the vegetables are tender.
  5. Season with salt and black pepper to taste. Blend the soup with an immersion blender until smooth, or leave it chunky for more texture.
  6. Serve hot, garnished with fresh parsley.
