  • Vegetable broth - 500 milliliters
  • Bay leaf - 1 leaf
  • Cumin - 1 teaspoon
  • Paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. In a medium pot, heat the olive oil over medium heat.
  2. Add the diced onion and sauté for about 5 minutes until translucent.
  3. Stir in the minced garlic, diced carrot, and diced celery, and cook for another 5 minutes until the vegetables begin to soften.
  4. Add the diced tomato, cooked chickpeas, vegetable broth, bay leaf, cumin, paprika, salt, and black pepper.

  6. Remove the bay leaf and use an immersion blender to puree the soup slightly for a creamier texture, if desired.
