  • Chicken broth - 500 ml
  • Onion - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Celery - 1 stalk, diced
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - 2 tablespoons, chopped
  • Lime - 1, juiced

Steps

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and minced garlic, sautéing until the onion is translucent.
  3. Stir in the diced carrot and celery, cooking for another 5 minutes until softened.
  4. Add the chicken breast to the pot, followed by the chicken broth, and bring to a boil.
  5. Reduce heat to a simmer and cook for about 15 minutes until the chicken is cooked through.
  6. Remove the chicken, shred it with two forks, and return it to the pot.
  7. Stir in the sweet corn and season with salt and black pepper to taste.
  8. Allow the soup to simmer for another 5 minutes.
  9. Remove from heat, stir in the lime juice and chopped parsley before serving.
