Ingredients

  • Black beans - 200 grams (soaked overnight)
  • Onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Green bell pepper - 1/2, diced
  • Tomato - 1 medium, diced
  • Vegetable broth - 500 ml
  • Olive oil - 2 tablespoons
  • Cumin powder - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and garlic, sautéing until the onion becomes translucent.
  2. Stir in the diced carrot and green bell pepper, cooking for an additional 5 minutes until softened.
  3. Add the diced tomato, cumin, salt, and black pepper to the pot, mixing well and cooking for another 3 minutes.
  4. Drain the soaked black beans and add them to the pot along with the vegetable broth. Bring the mixture to a boil.
  5. Reduce the heat to low, cover the pot, and simmer for about 30 minutes or until the beans are tender.
  6. Once cooked, use an immersion blender to blend the soup to your desired consistency, leaving some beans whole for texture.
  7. Serve hot, garnished with fresh cilantro and a drizzle of olive oil.
