Steps

  1. In a medium pot, heat the olive oil over medium heat.
  2. Add the chopped onion and minced garlic, sautéing until translucent (about 3-4 minutes).
  3. Stir in the diced carrot and potato, cooking for an additional 5 minutes.
  4. Pour in the vegetable broth and bring to a boil.
  5. Reduce heat and add the chopped heart of palm, cooking for 10 minutes until the vegetables are tender.
