  • Potato - 1 medium, diced
  • Green beans - 100 grams, chopped
  • Tomato - 1 medium, diced
  • Beef broth - 800 milliliters
  • Bay leaf - 1
  • Salt - to taste
  • Black pepper - to taste
  • Parsley - 1 tablespoon, chopped for garnish

Steps

  1. Heat the olive oil in a large pot over medium heat. Add the chopped onion and garlic, sautéing until soft and translucent.
  2. Add the beef cubes to the pot, browning them on all sides.
  3. Stir in the diced carrot, potato, and green beans, cooking for an additional 5 minutes.
  4. Add the diced tomato, beef broth, bay leaf, salt, and black pepper to the pot. Bring the mixture to a boil.
  5. Once boiling, reduce the heat to low and cover the pot. Let the soup simmer for about 40 minutes, or until the beef is tender.
