Ingredients

  • CARA (taro root) - 300 grams, peeled and diced
  • Coconut milk - 400 ml
  • Vegetable broth - 500 ml
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Olive oil - 2 tablespoons
  • Salt - 1 teaspoon, or to taste
  • Black pepper - 1/2 teaspoon, or to taste
  • Fresh parsley - 2 tablespoons, chopped (for garnish)

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until the onion is translucent, about 5 minutes.
  2. Add the diced cará and cook for another 5 minutes, stirring occasionally.
  3. Pour in the vegetable broth and bring the mixture to a boil. Reduce heat and let it simmer for about 15 minutes, or until the cará is tender.
  4. Add the coconut milk to the pot, stirring well. Allow the soup to simmer for an additional 5 minutes.
  5. Using an immersion blender, carefully blend the soup until smooth. If you prefer a chunkier texture, blend only half of the soup.
  6. Season with salt and black pepper to taste. Serve hot, garnished with chopped parsley.
