Sopa de Cará

- CARA (taro root) - 300 grams, peeled and diced
- Coconut milk - 400 ml
- Vegetable broth - 500 ml
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Olive oil - 2 tablespoons
- Salt - 1 teaspoon, or to taste
- Black pepper - 1/2 teaspoon, or to taste
- Fresh parsley - 2 tablespoons, chopped (for garnish)
Steps
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and garlic, sautéing until the onion is translucent, about 5 minutes.
- Add the diced cará and cook for another 5 minutes, stirring occasionally.
- Pour in the vegetable broth and bring the mixture to a boil. Reduce heat and let it simmer for about 15 minutes, or until the cará is tender.
- Add the coconut milk to the pot, stirring well. Allow the soup to simmer for an additional 5 minutes.
- Using an immersion blender, carefully blend the soup until smooth. If you prefer a chunkier texture, blend only half of the soup.
- Season with salt and black pepper to taste. Serve hot, garnished with chopped parsley.
