- Shrimp (peeled and deveined) - 250 grams
- Coconut milk - 400 ml
- Fish stock - 200 ml
- Red bell pepper - 1 medium, diced
- Onion - 1 medium, chopped
- Garlic - 3 cloves, minced
- Tomato - 1 medium, chopped
- Cilantro - 1/4 cup, chopped
- Olive oil - 2 tablespoons
- Lime juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Chili flakes - 1/2 teaspoon (optional)
Steps
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent, about 5 minutes.
- Add the minced garlic and diced red bell pepper to the pot, cooking for another 3-4 minutes until the vegetables are softened.
- Stir in the chopped tomato and cook for an additional 2 minutes until the tomato starts to break down.
- Pour in the fish stock and bring to a simmer. Let it cook for 5 minutes to allow the flavors to meld.
- Add the coconut milk and season with salt, black pepper, and chili flakes (if using). Stir well and bring back to a gentle simmer.
- Add the shrimp to the pot and cook for about 5-7 minutes, or until the shrimp are pink and cooked through.
- Remove from heat, stir in the lime juice and chopped cilantro. Adjust seasoning if necessary.
- Serve hot, garnished with additional cilantro if desired.
