- Broccoli - 300 grams, chopped
- Onion - 1 medium, diced
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Vegetable broth - 500 ml
- Coconut milk - 100 ml
- Olive oil - 1 tablespoon
- Nutritional yeast - 2 tablespoons
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- In a large pot, heat the olive oil over medium heat. Add the diced onion and cook until translucent, about 5 minutes.
- Add the minced garlic and diced carrot to the pot, cooking for an additional 3 minutes until fragrant.
- Stir in the chopped broccoli and sauté for 2 minutes, allowing it to soften slightly.
- Pour in the vegetable broth, bring to a boil, then reduce the heat and let it simmer for about 15 minutes until the broccoli is tender.
- Remove the pot from heat and use an immersion blender to puree the soup until smooth. Alternatively, carefully transfer the soup in batches to a blender.
- Return the blended soup to the pot. Stir in the coconut milk, nutritional yeast, lemon juice, salt, and black pepper. Heat through for another 2 minutes.
- Serve hot, garnished with fresh parsley.
