Ingredients

  • Broccoli - 300 grams, chopped
  • Onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Vegetable broth - 500 ml
  • Coconut milk - 100 ml
  • Olive oil - 1 tablespoon
  • Nutritional yeast - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the diced onion and cook until translucent, about 5 minutes.
  2. Add the minced garlic and diced carrot to the pot, cooking for an additional 3 minutes until fragrant.
  3. Stir in the chopped broccoli and sauté for 2 minutes, allowing it to soften slightly.
  4. Pour in the vegetable broth, bring to a boil, then reduce the heat and let it simmer for about 15 minutes until the broccoli is tender.
  5. Remove the pot from heat and use an immersion blender to puree the soup until smooth. Alternatively, carefully transfer the soup in batches to a blender.
  6. Return the blended soup to the pot. Stir in the coconut milk, nutritional yeast, lemon juice, salt, and black pepper. Heat through for another 2 minutes.
  7. Serve hot, garnished with fresh parsley.
