- Garlic - 2 cloves, minced
- Ginger - 1 teaspoon, grated
- Olive oil - 1 tablespoon
- Cumin - 1 teaspoon
- Turmeric - 1/2 teaspoon
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - for garnish
Steps
- In a pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent.
- Add the minced garlic and grated ginger, cooking for another minute until fragrant.
- Stir in the diced sweet potatoes, cumin, turmeric, salt, and pepper. Cook for 2-3 minutes while stirring.
- Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for about 15-20 minutes, or until the sweet potatoes are tender.
- Using an immersion blender, puree the soup until smooth. If you prefer a chunkier texture, blend only half of the soup.
- Stir in the coconut milk and heat through for another 2-3 minutes.
- Serve hot, garnished with fresh cilantro.
