  • Vegetable broth - 500 ml
  • Onion - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Ginger - 1 teaspoon, grated
  • Olive oil - 1 tablespoon
  • Cumin - 1 teaspoon
  • Turmeric - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish

Steps

  1. In a pot, heat the olive oil over medium heat. Add the chopped onion and sauté for about 5 minutes until translucent.
  2. Add the minced garlic and grated ginger, cooking for another minute until fragrant.
  3. Stir in the diced sweet potatoes, cumin, turmeric, salt, and pepper. Cook for 2-3 minutes while stirring.
  4. Pour in the vegetable broth and bring to a boil. Reduce heat and simmer for about 15-20 minutes, or until the sweet potatoes are tender.
  5. Using an immersion blender, puree the soup until smooth. If you prefer a chunkier texture, blend only half of the soup.
  6. Stir in the coconut milk and heat through for another 2-3 minutes.
  7. Serve hot, garnished with fresh cilantro.
