Ingredients

  • Potatoes - 400 grams, peeled and diced
  • Onion - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Carrot - 1 medium, diced
  • Vegetable broth - 500 ml
  • Coconut milk - 200 ml
  • Olive oil - 2 tablespoons
  • Fresh parsley - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste
  • Lime - 1, juiced

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until translucent, about 5 minutes.
  2. Add the diced potatoes and carrot to the pot, stirring for another 5 minutes until they begin to soften.
  3. Pour in the vegetable broth and bring to a boil. Reduce heat and let it simmer for about 15 minutes, or until the potatoes are tender.
  4. Once the vegetables are cooked, use an immersion blender to puree the soup until smooth. If you don't have an immersion blender, carefully transfer the soup to a regular blender in batches.
  5. Stir in the coconut milk and season with salt, black pepper, and lime juice. Heat through for an additional 5 minutes.
  6. Serve hot, garnished with fresh chopped parsley.
