- Potatoes - 400 grams, peeled and diced
- Onion - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Carrot - 1 medium, diced
- Vegetable broth - 500 ml
- Coconut milk - 200 ml
- Olive oil - 2 tablespoons
- Fresh parsley - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
- Lime - 1, juiced
Steps
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, sautéing until translucent, about 5 minutes.
- Add the diced potatoes and carrot to the pot, stirring for another 5 minutes until they begin to soften.
- Pour in the vegetable broth and bring to a boil. Reduce heat and let it simmer for about 15 minutes, or until the potatoes are tender.
- Once the vegetables are cooked, use an immersion blender to puree the soup until smooth. If you don't have an immersion blender, carefully transfer the soup to a regular blender in batches.
- Stir in the coconut milk and season with salt, black pepper, and lime juice. Heat through for an additional 5 minutes.
- Serve hot, garnished with fresh chopped parsley.
