  • Garlic - 2 cloves
  • Olive oil - 2 tablespoons
  • Vegetable broth - 500 ml
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Clean the leeks thoroughly to remove any dirt, then slice them thinly.
  2. Peel and chop the potato and carrot into small cubes.
  3. Dice the onion and mince the garlic.
  4. In a medium pot, heat the olive oil over medium heat. Add the onion and garlic, sautéing until translucent.
  5. Add the sliced leeks, potato, and carrot to the pot, stirring occasionally for about 5 minutes.
  6. Pour in the vegetable broth and season with salt and black pepper. Bring to a boil.
  7. Reduce the heat and let it simmer for about 15-20 minutes, or until the vegetables are tender.
  8. Using an immersion blender, blend the soup until smooth. If you prefer a chunkier texture, blend only half of the soup.
  9. Taste and adjust seasoning if necessary. Serve hot, garnished with fresh parsley.
