- Vegetable broth - 500 ml

- Fresh parsley - for garnish
Steps
- Clean the leeks thoroughly to remove any dirt, then slice them thinly.
- Peel and chop the potato and carrot into small cubes.
- Dice the onion and mince the garlic.
- In a medium pot, heat the olive oil over medium heat. Add the onion and garlic, sautéing until translucent.
- Add the sliced leeks, potato, and carrot to the pot, stirring occasionally for about 5 minutes.
- Pour in the vegetable broth and season with salt and black pepper. Bring to a boil.
- Reduce the heat and let it simmer for about 15-20 minutes, or until the vegetables are tender.
- Using an immersion blender, blend the soup until smooth. If you prefer a chunkier texture, blend only half of the soup.
- Taste and adjust seasoning if necessary. Serve hot, garnished with fresh parsley.
