- Carrot - 1 medium, diced
- Vegetable broth - 500 ml
- Coconut milk - 200 ml
- Olive oil - 2 tablespoons
- Thyme - 1 teaspoon, dried
- Salt - to taste
- Black pepper - to taste
- Fresh parsley - for garnish
Steps
- Heat the olive oil in a pot over medium heat.
- Add the chopped leeks and minced garlic, sautéing until soft and fragrant, about 5 minutes.
- Stir in the diced potato and carrot, cooking for an additional 5 minutes.
- Pour in the vegetable broth and add the dried thyme. Bring to a boil, then reduce heat and simmer for 15 minutes, or until the vegetables are tender.
- Remove the pot from heat and blend the soup in batches using a blender or an immersion blender until smooth.
- Return the blended soup to the pot, stir in the coconut milk, and season with salt and black pepper to taste.
- Heat the soup gently for another 5 minutes, then serve hot, garnished with fresh parsley.
