  • Potato - 1 medium, peeled and diced
  • Carrot - 1 medium, diced
  • Vegetable broth - 500 ml
  • Coconut milk - 200 ml
  • Olive oil - 2 tablespoons
  • Thyme - 1 teaspoon, dried
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley - for garnish

Steps

  1. Heat the olive oil in a pot over medium heat.
  2. Add the chopped leeks and minced garlic, sautéing until soft and fragrant, about 5 minutes.
  3. Stir in the diced potato and carrot, cooking for an additional 5 minutes.
  4. Pour in the vegetable broth and add the dried thyme. Bring to a boil, then reduce heat and simmer for 15 minutes, or until the vegetables are tender.
  5. Remove the pot from heat and blend the soup in batches using a blender or an immersion blender until smooth.
  6. Return the blended soup to the pot, stir in the coconut milk, and season with salt and black pepper to taste.
  7. Heat the soup gently for another 5 minutes, then serve hot, garnished with fresh parsley.
