Ingredients

  • Cassava (aipim) - 300 grams, peeled and chopped
  • Vegetable broth - 500 ml
  • Onion - 1 medium, diced
  • Garlic - 2 cloves, minced
  • Olive oil - 1 tablespoon
  • Coconut milk - 100 ml
  • Fresh cilantro - 2 tablespoons, chopped
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. In a pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, and sauté until translucent, about 5 minutes.
  2. Add the chopped cassava to the pot, followed by the vegetable broth. Bring to a boil, then reduce the heat and let it simmer for about 25 minutes, or until the cassava is tender.
  3. Once the cassava is tender, use an immersion blender to puree the soup until smooth. If you prefer a chunkier texture, blend only half of the soup.
  4. Stir in the coconut milk and season with salt and black pepper to taste. Heat the soup for an additional 5 minutes.
  5. Serve hot, garnished with fresh cilantro.
