- Cassava (aipim) - 300 grams, peeled and chopped
- Vegetable broth - 500 ml
- Onion - 1 medium, diced
- Garlic - 2 cloves, minced
- Olive oil - 1 tablespoon
- Coconut milk - 100 ml
- Fresh cilantro - 2 tablespoons, chopped
- Salt - to taste
- Black pepper - to taste
Steps
- In a pot, heat the olive oil over medium heat. Add the diced onion and minced garlic, and sauté until translucent, about 5 minutes.
- Add the chopped cassava to the pot, followed by the vegetable broth. Bring to a boil, then reduce the heat and let it simmer for about 25 minutes, or until the cassava is tender.
- Once the cassava is tender, use an immersion blender to puree the soup until smooth. If you prefer a chunkier texture, blend only half of the soup.
- Stir in the coconut milk and season with salt and black pepper to taste. Heat the soup for an additional 5 minutes.
- Serve hot, garnished with fresh cilantro.
