- Pumpkin - 400 grams, peeled and cubed
- Onion - 1 medium, chopped
- Garlic - 2 cloves, minced
- Vegetable broth - 500 ml
- Coconut milk - 100 ml
- Olive oil - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
- Fresh cilantro - for garnish
Steps
- In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion becomes translucent, about 5 minutes.
- Add the cubed pumpkin to the pot, followed by the vegetable broth. Bring to a boil, then reduce the heat and simmer for 15-20 minutes, or until the pumpkin is tender.
- Using an immersion blender, puree the soup until smooth. Alternatively, you can transfer the soup to a blender in batches to puree.
- Stir in the coconut milk and season with salt and black pepper to taste. Heat the soup gently for another 5 minutes.
- Serve hot, garnished with fresh cilantro.
