Ingredients

  • Pumpkin - 400 grams, peeled and cubed
  • Onion - 1 medium, chopped
  • Garlic - 2 cloves, minced
  • Vegetable broth - 500 ml
  • Coconut milk - 100 ml
  • Olive oil - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish

Steps

  1. In a large pot, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until the onion becomes translucent, about 5 minutes.
  2. Add the cubed pumpkin to the pot, followed by the vegetable broth. Bring to a boil, then reduce the heat and simmer for 15-20 minutes, or until the pumpkin is tender.
  3. Using an immersion blender, puree the soup until smooth. Alternatively, you can transfer the soup to a blender in batches to puree.
  4. Stir in the coconut milk and season with salt and black pepper to taste. Heat the soup gently for another 5 minutes.
  5. Serve hot, garnished with fresh cilantro.
