- Firm Tofu - 200 grams
- Cherry Tomatoes - 150 grams, halved
- Cucumber - 1 medium, diced
- Red Bell Pepper - 1, diced
- Red Onion - 1/4, thinly sliced
- Fresh Cilantro - 2 tablespoons, chopped
- Olive Oil - 2 tablespoons
- Lemon Juice - 1 tablespoon
- Garlic - 1 clove, minced
- Salt - to taste
- Black Pepper - to taste
Steps
- Press the tofu for 10 minutes to remove excess water, then cut it into 1 cm cubes.
- Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat and add the tofu cubes.
- Cook the tofu for about 8-10 minutes, turning occasionally until golden brown on all sides. Season with salt and black pepper to taste.
- In a large bowl, combine cherry tomatoes, cucumber, red bell pepper, red onion, and cilantro.
- In a small bowl, whisk together the remaining 1 tablespoon of olive oil, lemon juice, minced garlic, salt, and black pepper to create the dressing.
- Once the tofu is cooked, let it cool slightly, then add it to the bowl of vegetables.
- Pour the dressing over the salad and toss gently to combine.
- Serve immediately or chill in the refrigerator for 10 minutes for a refreshing experience.
