Ingredients

  • Firm Tofu - 200 grams
  • Cherry Tomatoes - 150 grams, halved
  • Cucumber - 1 medium, diced
  • Red Bell Pepper - 1, diced
  • Red Onion - 1/4, thinly sliced
  • Fresh Cilantro - 2 tablespoons, chopped
  • Olive Oil - 2 tablespoons
  • Lemon Juice - 1 tablespoon
  • Garlic - 1 clove, minced
  • Salt - to taste
  • Black Pepper - to taste

Steps

  1. Press the tofu for 10 minutes to remove excess water, then cut it into 1 cm cubes.
  2. Heat 1 tablespoon of olive oil in a non-stick skillet over medium heat and add the tofu cubes.
  3. Cook the tofu for about 8-10 minutes, turning occasionally until golden brown on all sides. Season with salt and black pepper to taste.
  4. In a large bowl, combine cherry tomatoes, cucumber, red bell pepper, red onion, and cilantro.
  5. In a small bowl, whisk together the remaining 1 tablespoon of olive oil, lemon juice, minced garlic, salt, and black pepper to create the dressing.
  6. Once the tofu is cooked, let it cool slightly, then add it to the bowl of vegetables.
  7. Pour the dressing over the salad and toss gently to combine.
  8. Serve immediately or chill in the refrigerator for 10 minutes for a refreshing experience.
