Ingredients

  • Quinoa - 150 grams
  • Mixed seafood (shrimp, squid, and mussels) - 200 grams
  • Cherry tomatoes - 100 grams, halved
  • Cucumber - 1 medium, diced
  • Red onion - 1 small, diced
  • Fresh cilantro - 20 grams, chopped
  • Lime - 1, juiced
  • Olive oil - 30 ml
  • Garlic - 2 cloves, minced
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the quinoa under cold water. In a pot, combine the quinoa with 300 ml of water and a pinch of salt. Bring to a boil, then reduce heat and let it simmer covered for about 15 minutes or until the water is absorbed. Fluff with a fork and set aside to cool.
  2. In a medium skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
  3. Add the mixed seafood to the skillet and cook for about 5-7 minutes until fully cooked, stirring occasionally. Season with salt and pepper to taste. Remove from heat and let it cool slightly.
  4. In a large bowl, combine the cooked quinoa, cherry tomatoes, cucumber, red onion, and cilantro. Add the cooked seafood.
  5. Drizzle the lime juice over the salad, toss gently to combine, and adjust seasoning if necessary. Serve chilled or at room temperature.
