- Quinoa - 150 grams
- Mixed seafood (shrimp, squid, and mussels) - 200 grams
- Cherry tomatoes - 100 grams, halved
- Cucumber - 1 medium, diced
- Red onion - 1 small, diced
- Fresh cilantro - 20 grams, chopped
- Lime - 1, juiced
- Olive oil - 30 ml
- Garlic - 2 cloves, minced
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the quinoa under cold water. In a pot, combine the quinoa with 300 ml of water and a pinch of salt. Bring to a boil, then reduce heat and let it simmer covered for about 15 minutes or until the water is absorbed. Fluff with a fork and set aside to cool.
- In a medium skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute until fragrant.
- Add the mixed seafood to the skillet and cook for about 5-7 minutes until fully cooked, stirring occasionally. Season with salt and pepper to taste. Remove from heat and let it cool slightly.
- In a large bowl, combine the cooked quinoa, cherry tomatoes, cucumber, red onion, and cilantro. Add the cooked seafood.
- Drizzle the lime juice over the salad, toss gently to combine, and adjust seasoning if necessary. Serve chilled or at room temperature.
