- Water - 250 ml
- Cooked shrimp - 100 grams
- Cooked squid, sliced - 100 grams
- Cherry tomatoes, halved - 100 grams
- Cucumber, diced - 50 grams
- Red bell pepper, diced - 50 grams
- Fresh cilantro, chopped - 2 tablespoons
- Olive oil - 2 tablespoons
- Lemon juice - 2 tablespoons
- Garlic, minced - 1 clove
- Salt - to taste
- Black pepper - to taste
Steps
- Rinse the quinoa under cold water to remove any bitterness.
- In a medium saucepan, bring 250 ml of water to a boil. Add the quinoa, reduce the heat to low, cover, and simmer for about 15 minutes or until the water is absorbed and the quinoa is fluffy.
- While the quinoa is cooking, prepare the seafood by ensuring the shrimp and squid are cleaned and cooked. If you are using pre-cooked seafood, simply set it aside.
- In a large mixing bowl, combine the cooked quinoa, cooked shrimp, sliced squid, cherry tomatoes, cucumber, red bell pepper, and chopped cilantro.
- In a small bowl, whisk together the olive oil, lemon juice, minced garlic, salt, and black pepper to create a dressing.
- Pour the dressing over the quinoa and seafood mixture, and toss gently to combine all ingredients.
- Serve chilled or at room temperature.
