  • Cooked shrimp - 100 grams
  • Cooked squid, sliced - 100 grams
  • Cherry tomatoes, halved - 100 grams
  • Cucumber, diced - 50 grams
  • Red bell pepper, diced - 50 grams
  • Fresh cilantro, chopped - 2 tablespoons
  • Olive oil - 2 tablespoons
  • Lemon juice - 2 tablespoons
  • Garlic, minced - 1 clove
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Rinse the quinoa under cold water to remove any bitterness.
  2. In a medium saucepan, bring 250 ml of water to a boil. Add the quinoa, reduce the heat to low, cover, and simmer for about 15 minutes or until the water is absorbed and the quinoa is fluffy.
  3. While the quinoa is cooking, prepare the seafood by ensuring the shrimp and squid are cleaned and cooked. If you are using pre-cooked seafood, simply set it aside.
  4. In a large mixing bowl, combine the cooked quinoa, cooked shrimp, sliced squid, cherry tomatoes, cucumber, red bell pepper, and chopped cilantro.
