- Eggs - 4 large
- Mayonnaise - 60 grams
- Dijon mustard - 1 tablespoon
- Red bell pepper - 50 grams, finely diced
- Green onion - 2, chopped
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Place the eggs in a saucepan and cover them with water. Bring to a boil over medium-high heat.
- Once boiling, cover the saucepan and turn off the heat. Let the eggs sit for 10-12 minutes.
- While the eggs are cooking, prepare the dressing by combining mayonnaise, Dijon mustard, lemon juice, salt, and black pepper in a bowl. Mix until smooth.
- After the eggs have finished cooking, transfer them to an ice bath to cool for about 5 minutes.
- Peel the cooled eggs and chop them into bite-sized pieces.
- In a mixing bowl, combine the chopped eggs, red bell pepper, green onion, and parsley.
- Pour the dressing over the egg mixture and gently fold until well combined.
- Taste and adjust seasoning if necessary. Serve chilled or at room temperature.
