Ingredients

  • Eggs - 4 large
  • Mayonnaise - 60 grams
  • Dijon mustard - 1 tablespoon
  • Red bell pepper - 50 grams, finely diced
  • Green onion - 2, chopped
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Place the eggs in a saucepan and cover them with water. Bring to a boil over medium-high heat.
  2. Once boiling, cover the saucepan and turn off the heat. Let the eggs sit for 10-12 minutes.
  3. While the eggs are cooking, prepare the dressing by combining mayonnaise, Dijon mustard, lemon juice, salt, and black pepper in a bowl. Mix until smooth.
  4. After the eggs have finished cooking, transfer them to an ice bath to cool for about 5 minutes.
  5. Peel the cooled eggs and chop them into bite-sized pieces.
  6. In a mixing bowl, combine the chopped eggs, red bell pepper, green onion, and parsley.
  7. Pour the dressing over the egg mixture and gently fold until well combined.
  8. Taste and adjust seasoning if necessary. Serve chilled or at room temperature.
