Ingredients

  • Eggs - 4 large
  • Cherry tomatoes - 200 grams, halved
  • Cucumber - 1 medium, diced
  • Red onion - 1 small, thinly sliced
  • Fresh parsley - 2 tablespoons, chopped
  • Olive oil - 2 tablespoons
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Place the eggs in a pot and cover them with water. Bring to a boil over medium heat.
  2. Once boiling, cover the pot and remove it from heat. Let the eggs sit for 10-12 minutes.
  3. While the eggs are cooking, prepare the vegetables: halve the cherry tomatoes, dice the cucumber, and thinly slice the red onion.
  4. In a large bowl, combine the cherry tomatoes, cucumber, red onion, and chopped parsley.
  5. In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper to make the dressing.
  6. After the eggs are done, run them under cold water to stop the cooking process. Peel and chop the eggs into quarters.
  7. Add the chopped eggs to the vegetable mixture and gently toss everything together.
  8. Drizzle the dressing over the salad and toss again to coat evenly.
  9. Serve the salad immediately or refrigerate for up to 30 minutes before serving.
