- Eggs - 4 large
- Cherry tomatoes - 200 grams, halved
- Cucumber - 1 medium, diced
- Red onion - 1 small, thinly sliced
- Fresh parsley - 2 tablespoons, chopped
- Olive oil - 2 tablespoons
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Place the eggs in a pot and cover them with water. Bring to a boil over medium heat.
- Once boiling, cover the pot and remove it from heat. Let the eggs sit for 10-12 minutes.
- While the eggs are cooking, prepare the vegetables: halve the cherry tomatoes, dice the cucumber, and thinly slice the red onion.
- In a large bowl, combine the cherry tomatoes, cucumber, red onion, and chopped parsley.
- In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper to make the dressing.
- After the eggs are done, run them under cold water to stop the cooking process. Peel and chop the eggs into quarters.
- Add the chopped eggs to the vegetable mixture and gently toss everything together.
- Drizzle the dressing over the salad and toss again to coat evenly.
- Serve the salad immediately or refrigerate for up to 30 minutes before serving.
