Ingredients
- Potatoes - 300 grams
- Carrots - 100 grams
- Green peas - 100 grams (frozen or fresh)
- Mayonnaise - 100 grams
- Lemon juice - 1 tablespoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Chopped parsley - 1 tablespoon
Steps
- Peel and dice the potatoes into small cubes. Place them in a pot with salted water and bring to a boil.
- While the potatoes are cooking, peel and dice the carrots into small pieces.
- After 10 minutes of boiling the potatoes, add the diced carrots and green peas to the pot. Cook for an additional 5-7 minutes until the vegetables are tender.
- Drain the cooked vegetables and let them cool for about 10 minutes.
- In a large bowl, mix the mayonnaise, lemon juice, salt, black pepper, and chopped parsley together.
- Add the cooled potatoes, carrots, and peas to the bowl with the dressing. Gently mix until all the vegetables are well coated.
- Cover and refrigerate the salad for at least 15 minutes before serving to allow the flavors to meld.
