Ingredients

  • Potatoes - 300 grams
  • Carrots - 100 grams
  • Green peas - 100 grams (frozen or fresh)
  • Mayonnaise - 100 grams
  • Lemon juice - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Chopped parsley - 1 tablespoon

Steps

  1. Peel and dice the potatoes into small cubes. Place them in a pot with salted water and bring to a boil.
  2. While the potatoes are cooking, peel and dice the carrots into small pieces.
  3. After 10 minutes of boiling the potatoes, add the diced carrots and green peas to the pot. Cook for an additional 5-7 minutes until the vegetables are tender.
  4. Drain the cooked vegetables and let them cool for about 10 minutes.
  5. In a large bowl, mix the mayonnaise, lemon juice, salt, black pepper, and chopped parsley together.
  6. Add the cooled potatoes, carrots, and peas to the bowl with the dressing. Gently mix until all the vegetables are well coated.
  7. Cover and refrigerate the salad for at least 15 minutes before serving to allow the flavors to meld.
