- Red onion - 1 small, finely chopped
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 2 tablespoons
- Olive oil - 1 tablespoon
- Garlic - 1 clove, minced
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Cherry tomatoes - 100 grams, halved
Steps
- If using dried chickpeas, soak them overnight and then boil for about 1 hour until tender. If using canned chickpeas, rinse and drain them.
- In a large bowl, combine the cooked chickpeas, diced red bell pepper, diced cucumber, chopped red onion, and cherry tomatoes.
- In a small bowl, whisk together the lemon juice, olive oil, minced garlic, salt, and black pepper to create the dressing.
