  • Cucumber - 1 medium, diced
  • Red onion - 1 small, finely chopped
  • Fresh parsley - 2 tablespoons, chopped
  • Lemon juice - 2 tablespoons
  • Olive oil - 1 tablespoon
  • Garlic - 1 clove, minced
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cherry tomatoes - 100 grams, halved

Steps

  1. If using dried chickpeas, soak them overnight and then boil for about 1 hour until tender. If using canned chickpeas, rinse and drain them.
  2. In a large bowl, combine the cooked chickpeas, diced red bell pepper, diced cucumber, chopped red onion, and cherry tomatoes.
  3. In a small bowl, whisk together the lemon juice, olive oil, minced garlic, salt, and black pepper to create the dressing.
