- Feta cheese - 50 grams, crumbled (optional)
Steps
- Preheat the oven to 200°C (400°F).
- In a large mixing bowl, combine the drained chickpeas, diced red bell pepper, diced red onion, minced garlic, and halved cherry tomatoes.
- Drizzle the olive oil over the mixture and sprinkle with cumin, paprika, salt, and black pepper. Toss everything together until well coated.
- Spread the chickpea and vegetable mixture evenly on a baking sheet lined with parchment paper.
