Ingredients

  • Green beans - 200 grams, trimmed
  • Cherry tomatoes - 100 grams, halved
  • Red onion - 50 grams, thinly sliced
  • Cilantro - 10 grams, chopped
  • Olive oil - 2 tablespoons
  • Lime juice - 1 tablespoon
  • Garlic - 1 clove, minced
  • Salt - to taste

Steps

  1. Bring a pot of salted water to a boil. Add the trimmed green beans and blanch for 3-4 minutes until bright green and tender-crisp.
  2. Drain the green beans and immediately transfer them to a bowl of ice water to stop the cooking process. Let them cool for about 2 minutes, then drain again.
  3. In a large bowl, combine the blanched green beans, halved cherry tomatoes, sliced red onion, and chopped cilantro.
  4. In a small bowl, whisk together the olive oil, lime juice, minced garlic, salt, and black pepper to create the dressing.
  5. Pour the dressing over the salad and toss gently to combine all the ingredients. Adjust seasoning if necessary.
  6. Serve immediately or refrigerate for up to 30 minutes to allow the flavors to meld.
