  • Eggs - 2 large
  • Cherry tomatoes - 100 grams, halved
  • Red onion - 30 grams, thinly sliced
  • Olive oil - 2 tablespoons
  • White vinegar - 1 tablespoon
  • Mustard - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Bring a small pot of water to a boil. Carefully add the eggs and boil for about 9-10 minutes for hard-boiled eggs.
  2. While the eggs are boiling, rinse the fresh spinach under cold water and drain well. Place the spinach in a large salad bowl.
  3. Add the halved cherry tomatoes and thinly sliced red onion to the bowl with spinach.
  4. In a separate small bowl, whisk together the olive oil, white vinegar, mustard, salt, and black pepper to create the dressing.
  5. Once the eggs are done boiling, transfer them to an ice bath or run them under cold water to cool. Peel the eggs and cut them into quarters.
