- Fresh spinach - 150 grams
- Eggs - 2 large
- Cherry tomatoes - 100 grams, halved
- Red onion - 30 grams, thinly sliced
- Olive oil - 2 tablespoons
- White vinegar - 1 tablespoon
- Mustard - 1 teaspoon
- Salt - to taste
- Black pepper - to taste
Steps
- Bring a small pot of water to a boil. Carefully add the eggs and boil for about 9-10 minutes for hard-boiled eggs.
- While the eggs are boiling, rinse the fresh spinach under cold water and drain well. Place the spinach in a large salad bowl.
- Add the halved cherry tomatoes and thinly sliced red onion to the bowl with spinach.
- In a separate small bowl, whisk together the olive oil, white vinegar, mustard, salt, and black pepper to create the dressing.
- Once the eggs are done boiling, transfer them to an ice bath or run them under cold water to cool. Peel the eggs and cut them into quarters.
