- Couscous - 100 grams
- Boiling water - 150 milliliters
- Cherry tomatoes - 100 grams, halved
- Cucumber - 1 medium, diced
- Red bell pepper - 1 small, diced
- Red onion - 1/2 small, finely chopped
- Fresh parsley - 2 tablespoons, chopped
- Olive oil - 2 tablespoons
- Lime juice - 2 tablespoons
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
Steps
- In a bowl, combine the couscous and boiling water. Cover and let it sit for 10 minutes until the water is absorbed.
- Fluff the couscous with a fork and let it cool to room temperature.
- In a large mixing bowl, combine the halved cherry tomatoes, diced cucumber, diced red bell pepper, chopped red onion, and parsley.
- In a small bowl, whisk together the olive oil, lime juice, salt, and black pepper.
- Add the cooled couscous to the vegetable mixture and pour the dressing over it. Toss gently to combine all the ingredients evenly.
