Ingredients

  • Couscous - 100 grams
  • Boiling water - 150 milliliters
  • Cherry tomatoes - 100 grams, halved
  • Cucumber - 1 medium, diced
  • Red bell pepper - 1 small, diced
  • Red onion - 1/2 small, finely chopped
  • Fresh parsley - 2 tablespoons, chopped
  • Olive oil - 2 tablespoons
  • Lime juice - 2 tablespoons
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. In a bowl, combine the couscous and boiling water. Cover and let it sit for 10 minutes until the water is absorbed.
  2. Fluff the couscous with a fork and let it cool to room temperature.
  3. In a large mixing bowl, combine the halved cherry tomatoes, diced cucumber, diced red bell pepper, chopped red onion, and parsley.
  4. In a small bowl, whisk together the olive oil, lime juice, salt, and black pepper.
  5. Add the cooled couscous to the vegetable mixture and pour the dressing over it. Toss gently to combine all the ingredients evenly.
