Ingredients

  • Cherry tomatoes (halved) - 100 grams
  • Cucumber (diced) - 1 medium
  • Red onion (thinly sliced) - 1/4 medium
  • Avocado (diced) - 1 medium
  • Olive oil - 2 tablespoons
  • Lime juice - 2 tablespoons
  • Garlic (minced) - 1 clove
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro (chopped) - 2 tablespoons

Steps

  1. In a medium pot, bring salted water to a boil and add the shrimp. Cook for 2-3 minutes or until they turn pink and opaque. Drain and set aside to cool.
  2. In a large mixing bowl, combine the mixed salad greens, cherry tomatoes, cucumber, red onion, and avocado.
