  • Olive oil - 2 tablespoons
  • Lime juice - 1 tablespoon
  • Fresh cilantro - 2 tablespoons, chopped
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. Peel and cut the sweet potatoes into 1-inch cubes.
  3. Spread the sweet potato cubes on a baking sheet, drizzle with 1 tablespoon of olive oil, and sprinkle with salt and pepper.
  4. Roast the sweet potatoes in the preheated oven for 20 minutes or until they are tender and lightly browned, stirring halfway through.
