- Chopped parsley - 2 tablespoons
Steps
- Peel the potatoes and carrots, then cut them into small cubes.
- In a pot of salted boiling water, add the potatoes and carrots. Cook for about 10-12 minutes or until tender.
- Add the green peas to the pot during the last 2 minutes of cooking.
- Drain the vegetables and let them cool for a few minutes.
- In a large bowl, combine the mayonnaise, mustard, lemon juice, salt, and black pepper. Mix well.
- Add the cooled potatoes, carrots, and peas to the dressing. Stir gently to combine.
- Sprinkle chopped parsley on top and mix lightly.
