Ingredients

  • Potatoes - 300 grams
  • Carrots - 100 grams
  • Green peas - 100 grams
  • Mayonnaise - 3 tablespoons
  • Mustard - 1 tablespoon
  • Lemon juice - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Chopped parsley - 2 tablespoons

Steps

  1. Peel the potatoes and carrots, then cut them into small cubes.
  2. In a pot of salted boiling water, add the potatoes and carrots. Cook for about 10-12 minutes or until tender.
  3. Add the green peas to the pot during the last 2 minutes of cooking.
  4. Drain the vegetables and let them cool for a few minutes.
  5. In a large bowl, combine the mayonnaise, mustard, lemon juice, salt, and black pepper. Mix well.
  6. Add the cooled potatoes, carrots, and peas to the dressing. Stir gently to combine.
  7. Sprinkle chopped parsley on top and mix lightly.
  8. Serve chilled or at room temperature.
