Ingredients

  • Salted cod - 200 grams
  • Boiled potatoes - 200 grams, diced
  • Cherry tomatoes - 100 grams, halved
  • Red onion - 50 grams, thinly sliced
  • Green bell pepper - 50 grams, diced
  • Black olives - 30 grams, pitted and sliced
  • Fresh parsley - 2 tablespoons, chopped
  • Olive oil - 3 tablespoons
  • Lemon juice - 1 tablespoon
  • Salt - to taste
  • Black pepper - to taste

Steps

  1. Soak the salted cod in water for 24 hours, changing the water 2-3 times to remove excess salt.
  2. After soaking, place the cod in a pot of boiling water and cook for 10-15 minutes until tender. Remove from heat, drain, and let it cool.
  3. Once cooled, shred the cod into bite-sized pieces, removing any skin and bones.
  4. In a large mixing bowl, combine the diced boiled potatoes, cherry tomatoes, red onion, green bell pepper, black olives, and shredded cod.
  5. In a small bowl, whisk together the olive oil, lemon juice, salt, and black pepper to create a dressing.
  6. Pour the dressing over the salad mixture and toss gently to combine.
  7. Garnish with chopped parsley and serve immediately or refrigerate for 30 minutes to allow flavors to meld.
