Ingredients

  • Avocado - 1 medium (about 200g)
  • Tomato - 2 medium (about 150g total)
  • Red onion - 1/4 medium (about 30g)
  • Fresh cilantro - 2 tablespoons, chopped
  • Lime juice - 2 tablespoons
  • Olive oil - 1 tablespoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Feta cheese - 50g, crumbled (optional)
  • Chickpeas - 100g, cooked or canned, drained and rinsed

Steps

  1. Cut the avocado in half, remove the pit, and scoop the flesh into a mixing bowl.
  2. Dice the tomatoes and finely chop the red onion, then add them to the bowl with the avocado.
  3. Add the chopped cilantro, lime juice, olive oil, salt, and black pepper to the bowl.
  4. Gently toss all the ingredients together to combine, being careful not to mash the avocado.
  5. If using, add the crumbled feta cheese and cooked chickpeas, and toss lightly to mix.
  6. Serve immediately as a fresh salad or as a side dish.
