Ingredients
- Butternut squash - 300 grams, cubed
- Quinoa - 100 grams
- Olive oil - 2 tablespoons
- Garlic - 1 clove, minced
- Red onion - 50 grams, finely chopped
- Cherry tomatoes - 100 grams, halved
- Fresh parsley - 2 tablespoons, chopped
- Lemon juice - 1 tablespoon
- Salt - to taste
- Black pepper - to taste
Steps
- Preheat the oven to 200°C (400°F).
- In a baking dish, toss the cubed butternut squash with 1 tablespoon of olive oil, salt, and black pepper. Roast in the oven for about 20 minutes, or until tender and slightly caramelized.
- While the squash is roasting, rinse the quinoa under cold water. In a saucepan, combine the quinoa with 200 ml of water and a pinch of salt. Bring to a boil, then reduce the heat to low, cover, and simmer for about 15 minutes or until the quinoa is fluffy and the water is absorbed.
- In a skillet, heat the remaining tablespoon of olive oil over medium heat. Add the minced garlic and chopped red onion, and sauté until the onion is translucent, about 3-4 minutes.
- In a large bowl, combine the roasted squash, cooked quinoa, sautéed onion and garlic, halved cherry tomatoes, chopped parsley, and lemon juice. Toss gently to combine.
- Taste and adjust seasoning with more salt and pepper if needed. Serve warm or at room temperature.
