  • Cherry tomatoes - 100 grams, halved
  • Red onion - 1/4, thinly sliced
  • Brazil nuts - 30 grams, roughly chopped
  • Feta cheese - 50 grams, crumbled
  • Balsamic vinegar - 1 tablespoon
  • Honey - 1 teaspoon

Steps

  1. Preheat the oven to 200°C (400°F).
  2. In a bowl, toss the diced pumpkin with olive oil, salt, and black pepper until well coated.
  3. Spread the pumpkin on a baking sheet in a single layer and roast for 20-25 minutes, or until tender and slightly caramelized.
