- Chicken breast - 300 grams
- Almond flour - 100 grams
- Eggs - 2 large
- Cream cheese - 100 grams
- Mozzarella cheese - 150 grams, shredded
- Parmesan cheese - 50 grams, grated
- Garlic powder - 1 teaspoon
- Dried oregano - 1 teaspoon
- Salt - 1 teaspoon
- Black pepper - 1/2 teaspoon
- Olive oil - 1 tablespoon
- Fresh parsley - for garnish
Steps
- Preheat the oven to 180°C (350°F).
- In a skillet, heat olive oil over medium heat, then add the chicken breasts. Season with salt, black pepper, and garlic powder. Cook until golden brown and fully cooked, about 6-8 minutes per side. Let it cool and shred the chicken.
- In a mixing bowl, combine almond flour, eggs, dried oregano, salt, and black pepper to create the pasta dough. Mix until a smooth dough forms.
- On a parchment-lined surface, roll out the dough into thin sheets, about 1/4 cm thick. Cut into rectangles (approximately 10x15 cm).
- Place a spoonful of shredded chicken at one end of each rectangle, roll them up tightly, and place seam-side down in a greased baking dish.
- In a separate bowl, mix cream cheese with half of the mozzarella and half of the Parmesan cheese. Spread this mixture over the rondellis in the baking dish.
- Top the rondellis with the remaining mozzarella and Parmesan cheese.
- Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden brown.
- Garnish with fresh parsley before serving.
