Ingredients

  • Chicken breast - 300 grams
  • Almond flour - 100 grams
  • Eggs - 2 large
  • Cream cheese - 100 grams
  • Mozzarella cheese - 150 grams, shredded
  • Parmesan cheese - 50 grams, grated
  • Garlic powder - 1 teaspoon
  • Dried oregano - 1 teaspoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Olive oil - 1 tablespoon
  • Fresh parsley - for garnish

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a skillet, heat olive oil over medium heat, then add the chicken breasts. Season with salt, black pepper, and garlic powder. Cook until golden brown and fully cooked, about 6-8 minutes per side. Let it cool and shred the chicken.
  3. In a mixing bowl, combine almond flour, eggs, dried oregano, salt, and black pepper to create the pasta dough. Mix until a smooth dough forms.
  4. On a parchment-lined surface, roll out the dough into thin sheets, about 1/4 cm thick. Cut into rectangles (approximately 10x15 cm).
  5. Place a spoonful of shredded chicken at one end of each rectangle, roll them up tightly, and place seam-side down in a greased baking dish.
  6. In a separate bowl, mix cream cheese with half of the mozzarella and half of the Parmesan cheese. Spread this mixture over the rondellis in the baking dish.
  7. Top the rondellis with the remaining mozzarella and Parmesan cheese.
  8. Bake in the preheated oven for 20-25 minutes, or until the cheese is bubbly and golden brown.
  9. Garnish with fresh parsley before serving.
