Ingredients

  • Lasagna sheets - 6 sheets
  • Fresh spinach - 200 grams
  • Ricotta cheese - 200 grams
  • Mozzarella cheese - 100 grams, grated
  • Parmesan cheese - 50 grams, grated
  • Garlic - 2 cloves, minced
  • Olive oil - 1 tablespoon
  • Salt - 1 teaspoon
  • Black pepper - 1/2 teaspoon
  • Nutmeg - a pinch
  • Tomato sauce - 300 ml
  • Basil - a few leaves, for garnish

Steps

  1. Preheat the oven to 180°C (350°F).
  2. In a large skillet, heat the olive oil over medium heat and sauté the minced garlic until fragrant, about 1 minute.
  3. Add the fresh spinach to the skillet and cook until wilted, approximately 3-4 minutes. Remove from heat and let cool.
  4. In a mixing bowl, combine the cooked spinach, ricotta cheese, half of the grated mozzarella cheese, salt, black pepper, and nutmeg. Mix well until all ingredients are incorporated.
  5. Cook the lasagna sheets in boiling salted water for about 5 minutes until slightly softened. Drain and place them on a clean kitchen towel.
  6. Spread a spoonful of the spinach and cheese mixture onto each lasagna sheet and roll them up tightly.
  7. In a baking dish, spread a layer of tomato sauce on the bottom. Place the rolled lasagna sheets seam-side down in the dish.
  8. Top the rolled lasagna with the remaining tomato sauce and sprinkle the rest of the mozzarella cheese and Parmesan cheese on top.
  9. Cover the dish with aluminum foil and bake in the preheated oven for 20 minutes. Remove the foil and bake for an additional 10 minutes until the cheese is bubbly and golden.
  10. Garnish with fresh basil leaves before serving.
