Ingredients
- Fresh spinach - 200 grams
- Eggs - 3 large
- All-purpose flour - 100 grams
- Baking powder - 1 teaspoon
- Salt - 1/2 teaspoon
- Black pepper - 1/4 teaspoon
- Cream cheese - 100 grams
- Grated Parmesan cheese - 50 grams
- Garlic - 1 clove, minced
- Chopped fresh parsley - 2 tablespoons
- Olive oil - 1 tablespoon
Steps
- Preheat the oven to 180°C (350°F) and grease a baking sheet with parchment paper.
- In a pot of boiling water, blanch the spinach for 2-3 minutes until wilted, then drain and cool it under cold water. Squeeze out excess moisture and chop finely.
- In a mixing bowl, whisk together the eggs, flour, baking powder, salt, and black pepper until smooth. Fold in the chopped spinach.
- Spread the spinach mixture evenly onto the prepared baking sheet, forming a rectangle about 1 cm thick.
- Bake in the preheated oven for 15-20 minutes or until the edges are lightly golden and the center is set.
- While the spinach base is baking, mix the cream cheese, Parmesan cheese, minced garlic, and chopped parsley in a bowl until well combined.
- Once the spinach base is done, remove it from the oven and let it cool for 5 minutes. Carefully flip it onto a clean kitchen towel.
- Spread the cheese mixture evenly over the spinach base, then use the towel to roll the spinach tightly into a log shape.
- Wrap the rolled rocambole in plastic wrap and refrigerate for at least 15 minutes to set.
- Slice into rounds and serve chilled or at room temperature.
