Ingredients

  • Fresh spinach - 200 grams
  • Eggs - 3 large
  • All-purpose flour - 100 grams
  • Baking powder - 1 teaspoon
  • Salt - 1/2 teaspoon
  • Black pepper - 1/4 teaspoon
  • Cream cheese - 100 grams
  • Grated Parmesan cheese - 50 grams
  • Garlic - 1 clove, minced
  • Chopped fresh parsley - 2 tablespoons
  • Olive oil - 1 tablespoon

Steps

  1. Preheat the oven to 180°C (350°F) and grease a baking sheet with parchment paper.
  2. In a pot of boiling water, blanch the spinach for 2-3 minutes until wilted, then drain and cool it under cold water. Squeeze out excess moisture and chop finely.
  3. In a mixing bowl, whisk together the eggs, flour, baking powder, salt, and black pepper until smooth. Fold in the chopped spinach.
  4. Spread the spinach mixture evenly onto the prepared baking sheet, forming a rectangle about 1 cm thick.
  5. Bake in the preheated oven for 15-20 minutes or until the edges are lightly golden and the center is set.
  6. While the spinach base is baking, mix the cream cheese, Parmesan cheese, minced garlic, and chopped parsley in a bowl until well combined.
  7. Once the spinach base is done, remove it from the oven and let it cool for 5 minutes. Carefully flip it onto a clean kitchen towel.
  8. Spread the cheese mixture evenly over the spinach base, then use the towel to roll the spinach tightly into a log shape.
  9. Wrap the rolled rocambole in plastic wrap and refrigerate for at least 15 minutes to set.
  10. Slice into rounds and serve chilled or at room temperature.
