- Arborio rice - 160 grams
- Vegetable broth - 500 milliliters
- Sicilian lemon juice - 2 tablespoons
- Sicilian lemon zest - 1 teaspoon
- Olive oil - 2 tablespoons
- Shallot - 1 medium, finely chopped
- Garlic - 2 cloves, minced
- Spinach - 100 grams, fresh
- Cherry tomatoes - 100 grams, halved
- Parmesan cheese - 50 grams, grated
- Black pepper - to taste
- Salt - to taste
- Fresh basil - for garnish
Steps
- In a saucepan, heat the vegetable broth over low heat and keep it warm.
- In a large skillet, heat the olive oil over medium heat and add the chopped shallot. Sauté until translucent, about 3 minutes.
- Add the minced garlic and sauté for an additional minute until fragrant.
- Stir in the Arborio rice and cook for 2-3 minutes, stirring constantly until the rice is lightly toasted.
- Begin adding the warm vegetable broth, one ladle at a time, stirring frequently. Allow the rice to absorb most of the liquid before adding the next ladle. Continue this process for about 15-20 minutes until the rice is creamy and al dente.
- In the last 5 minutes of cooking, add the fresh spinach and halved cherry tomatoes to the risotto, stirring until the spinach wilts.
- Remove the skillet from heat and stir in the Sicilian lemon juice, lemon zest, and grated Parmesan cheese. Season with salt and black pepper to taste.
- Serve hot, garnished with fresh basil leaves.
