Ingredients

  • Arborio rice - 160 grams
  • Vegetable broth - 500 milliliters
  • Sicilian lemon juice - 2 tablespoons
  • Sicilian lemon zest - 1 teaspoon
  • Olive oil - 2 tablespoons
  • Shallot - 1 medium, finely chopped
  • Garlic - 2 cloves, minced
  • Spinach - 100 grams, fresh
  • Cherry tomatoes - 100 grams, halved
  • Parmesan cheese - 50 grams, grated
  • Black pepper - to taste
  • Salt - to taste
  • Fresh basil - for garnish

Steps

  1. In a saucepan, heat the vegetable broth over low heat and keep it warm.
  2. In a large skillet, heat the olive oil over medium heat and add the chopped shallot. Sauté until translucent, about 3 minutes.
  3. Add the minced garlic and sauté for an additional minute until fragrant.
  4. Stir in the Arborio rice and cook for 2-3 minutes, stirring constantly until the rice is lightly toasted.
  5. Begin adding the warm vegetable broth, one ladle at a time, stirring frequently. Allow the rice to absorb most of the liquid before adding the next ladle. Continue this process for about 15-20 minutes until the rice is creamy and al dente.
  6. In the last 5 minutes of cooking, add the fresh spinach and halved cherry tomatoes to the risotto, stirring until the spinach wilts.
  7. Remove the skillet from heat and stir in the Sicilian lemon juice, lemon zest, and grated Parmesan cheese. Season with salt and black pepper to taste.
  8. Serve hot, garnished with fresh basil leaves.
