Ingredients

  • Almond flour - 100g
  • Butter - 30g
  • Eggs - 3 large
  • Heavy cream - 100ml
  • Leeks - 1 medium (about 100g, sliced)
  • Grated cheese (such as Gruyère or Parmesan) - 50g
  • Salt - 1/2 tsp
  • Black pepper - 1/4 tsp
  • Olive oil - 1 tbsp
  • Fresh parsley - 1 tbsp (chopped, for garnish)

Steps

  1. Preheat your oven to 180°C (350°F).
  2. In a mixing bowl, combine almond flour, melted butter, and a pinch of salt to form a dough for the crust. Press the mixture into the bottom and sides of a greased 20cm (8-inch) pie dish.
  3. In a skillet, heat olive oil over medium heat and sauté the sliced leeks until soft and translucent, about 5-7 minutes. Remove from heat and let cool slightly.
  4. In a separate bowl, whisk together the eggs, heavy cream, salt, and black pepper until well combined.
  5. Add the sautéed leeks and grated cheese to the egg mixture, stirring to combine.
  6. Pour the leek and egg mixture into the prepared almond flour crust.
  7. Bake in the preheated oven for about 25-30 minutes, or until the filling is set and the top is lightly golden.
  8. Remove from the oven and let it cool for a few minutes before slicing. Garnish with chopped fresh parsley and serve warm.
