- Almond flour - 100g
- Butter - 30g
- Eggs - 3 large
- Heavy cream - 100ml
- Leeks - 1 medium (about 100g, sliced)
- Grated cheese (such as Gruyère or Parmesan) - 50g
- Salt - 1/2 tsp
- Black pepper - 1/4 tsp
- Olive oil - 1 tbsp
- Fresh parsley - 1 tbsp (chopped, for garnish)
Steps
- Preheat your oven to 180°C (350°F).
- In a mixing bowl, combine almond flour, melted butter, and a pinch of salt to form a dough for the crust. Press the mixture into the bottom and sides of a greased 20cm (8-inch) pie dish.
- In a skillet, heat olive oil over medium heat and sauté the sliced leeks until soft and translucent, about 5-7 minutes. Remove from heat and let cool slightly.
- In a separate bowl, whisk together the eggs, heavy cream, salt, and black pepper until well combined.
- Add the sautéed leeks and grated cheese to the egg mixture, stirring to combine.
- Pour the leek and egg mixture into the prepared almond flour crust.
- Bake in the preheated oven for about 25-30 minutes, or until the filling is set and the top is lightly golden.
- Remove from the oven and let it cool for a few minutes before slicing. Garnish with chopped fresh parsley and serve warm.
