Ingredients

  • Vegetable broth - 500 ml
  • Coconut milk - 100 ml
  • Cumin - 1 teaspoon
  • Turmeric - 1/2 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh cilantro - for garnish

Steps

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and sauté until translucent, about 5 minutes.
  3. Stir in the minced garlic and cook for another minute until fragrant.
  4. Add the cubed pumpkin to the pot, followed by the cumin, turmeric, salt, and black pepper. Stir well to coat the pumpkin in the spices.
  5. Pour in the vegetable broth and bring to a boil.
  6. Reduce the heat, cover the pot, and let it simmer for about 15 minutes, or until the pumpkin is tender.
  7. Once the pumpkin is cooked, use a potato masher or immersion blender to mash the mixture to your desired consistency.
  8. Stir in the coconut milk and cook for an additional 5 minutes until heated through.
  9. Serve hot, garnished with fresh cilantro.
