- Coconut milk - 100 ml
- Cumin - 1 teaspoon
- Turmeric - 1/2 teaspoon

- Fresh cilantro - for garnish
Steps
- Heat the olive oil in a large pot over medium heat.
- Add the chopped onion and sauté until translucent, about 5 minutes.
- Stir in the minced garlic and cook for another minute until fragrant.
- Add the cubed pumpkin to the pot, followed by the cumin, turmeric, salt, and black pepper. Stir well to coat the pumpkin in the spices.
- Pour in the vegetable broth and bring to a boil.
- Reduce the heat, cover the pot, and let it simmer for about 15 minutes, or until the pumpkin is tender.
- Once the pumpkin is cooked, use a potato masher or immersion blender to mash the mixture to your desired consistency.
- Stir in the coconut milk and cook for an additional 5 minutes until heated through.
- Serve hot, garnished with fresh cilantro.
