Ingredients

  • Pumpkin (peeled and diced) - 400 grams
  • Onion (finely chopped) - 1 medium
  • Garlic (minced) - 2 cloves
  • Olive oil - 2 tablespoons
  • Vegetable broth - 500 milliliters
  • Cumin powder - 1 teaspoon
  • Smoked paprika - 1 teaspoon
  • Salt - to taste
  • Black pepper - to taste
  • Fresh parsley (chopped) - 2 tablespoons
  • Lime (juiced) - 1

Steps

  1. Heat the olive oil in a medium saucepan over medium heat.
  2. Add the chopped onion and minced garlic, sautéing until the onion is translucent, about 5 minutes.
  3. Stir in the cumin and smoked paprika, cooking for another minute to release the spices' aromas.
  4. Add the diced pumpkin to the pan and stir to coat with the onion and spices.
  5. Pour in the vegetable broth, ensuring the pumpkin is submerged, and bring to a boil.
  6. Reduce the heat to low, cover, and simmer for about 15-20 minutes or until the pumpkin is tender.
  7. Once cooked, use a potato masher or fork to mash the pumpkin to your desired consistency, leaving some chunks for texture.
  8. Season with salt, black pepper, and lime juice, adjusting to taste.
  9. Serve hot, garnished with fresh parsley.
